Ingredients
- 2 cups pumpkin puree
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 potato, diced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the carrot and potato, and cook for about 5 minutes.
- Stir in the pumpkin puree and vegetable broth.
- Add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.
- Serve warm.
