Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup buttermilk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup (for serving)


Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In another bowl, mix the buttermilk, pumpkin puree, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and grease lightly.
  5. Pour about 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with maple syrup.

Notes

Make sure not to overmix the batter; some lumps are okay. Use fresh pumpkin puree for the best flavor.
