Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon pumpkin pie spice
- 1 cup buttermilk
- 1/2 cup pumpkin puree
- 1 large egg
- 2 tablespoons melted butter
- Maple syrup (for serving)
Instructions
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, mix the buttermilk, pumpkin puree, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat a non-stick skillet or griddle over medium heat and grease lightly.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple syrup.
Notes
Make sure not to overmix the batter; some lumps are okay. Use fresh pumpkin puree for the best flavor.
