Description
Thick, chewy, flourless protein cookies made in 20 minutes using just 4 ingredients. Each cookie packs over 20g of protein and contains no refined sugar.
Ingredients
1 cup peanut butter (or any smooth nut/seed butter)
2/3 cup brown sugar substitute (erythritol or monk fruit)
1 large egg (or 3 tbsp ground chia seeds + 6 tbsp water)
1/2 cup vanilla protein powder
1/4 cup sugar-free chocolate chips (optional)
Instructions
1. Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
2. In a bowl, combine peanut butter, sweetener, egg (or chia egg), and protein powder. Mix until fully combined.
3. Form 12 equal-sized dough balls. Place them on the tray and flatten slightly into cookie shapes.
4. Bake for 12–14 minutes or until edges are lightly golden. Let cool on the tray before serving.
Notes
Use whey or casein protein powder for best results.
Store in an airtight container at room temperature for up to 7 days.
Freeze in batches for up to 3 months.
Vegan option: use chia egg and plant-based protein.
