Ingredients
4 cups potatoes, diced (Russet or Yukon Gold)
1 ½ cups bell peppers, diced (use red, green, or yellow)
1 cup onion, diced
2 tablespoons vegetable oil (or avocado oil)
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon paprika (optional)
¼ teaspoon garlic powder (optional)
Fresh parsley or chives, chopped (optional garnish)
Instructions
Peel and dice the potatoes into small cubes. Dice bell peppers and onions.
Heat oil in a large skillet over medium-high heat.
Add potatoes and cook for 10–12 minutes, stirring occasionally, until golden and crispy.
Reduce heat to medium. Add onions and bell peppers. Sauté for 5–7 minutes until softened.
Season with salt, pepper, paprika, and garlic powder. Mix well.
Serve hot, garnished with fresh herbs if desired.
Notes
For extra crispiness, soak diced potatoes in cold water for 10 minutes, then dry before cooking.
