Description
A comforting and creamy potato soup blended with fresh herbs, perfect for chilly days.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup milk or cream
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Fresh herbs (such as thyme, rosemary, or parsley)
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes and broth, then bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the milk or cream, and season with salt and pepper.
- Garnish with fresh herbs before serving. Enjoy!
Notes
For a richer flavor, try roasting the potatoes first. You can adjust thickness by adding more broth or milk. Can be made vegan with vegetable broth and coconut milk.
