Description

Pork Menudo is a beloved Filipino dish featuring tender pork and liver simmered with vegetables and savory sauce.


Ingredients

  • 750g pork, cut into cubes
  • 2 1/2 tbsp lemon extract / juice
  • 300g pork liver, cut into cubes
  • 1 tbsp lemon extract / juice
  • Ground black pepper, to taste
  • Soy sauce, to taste
  • 2 chorizos or sausages, sliced
  • 9 potato marbles, peeled
  • 2 small carrots, sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, chopped
  • 6 tomatoes, chopped
  • 2 bay leaves
  • 2 cups hot water
  • 1/3 cup tomato sauce
  • 1/4 cup green peas
  • 1/4 cup dried raisins
  • Cooking oil
  • Salt, to taste
  • Grated cheese for topping


Instructions

  1. Marinate the pork and pork liver separately with lemon extract, soy sauce, and ground black pepper for one hour. Set aside the marinade sauce.
  2. In a pan with oil, fry the carrots and potatoes until they turn light brown. Remove them from the pan and set aside.
  3. Fry the marinated pork liver in the same pan for about three minutes, then remove it and set aside.
  4. In the same pan, sauté the minced garlic and chopped onion until aromatic.
  5. Add the chopped tomatoes and bell pepper to the pan, cooking until soft.
  6. Incorporate the marinated pork and bay leaves, sautéing for about five minutes.
  7. Pour in the marinade sauce and let it simmer for five minutes.
  8. Stir in the tomato sauce and hot water, cover, and simmer for 20 minutes or until the pork is tender.
  9. Add the sautéed carrots, potatoes, and raisins, continuing to cook until they are tender.
  10. Add the pork liver, sliced chorizo, and green peas to the pan. Simmer for an additional five minutes.
  11. Top with grated cheese and adjust salt to taste. Let it simmer until flavors meld and the sauce thickens.
  12. Serve hot and enjoy!

Notes

For best flavors, marinate pork longer and don’t overcook vegetables for crunch.
