Description
A delightful Filipino treat featuring a flaky exterior filled with sweet and creamy purple yam, perfect as a snack or dessert.
Ingredients
- 3 cups all-purpose flour
- 6 tbsp vegetable oil
- 1 tsp salt
- 1 cup water
- 1 medium-sized purple yam (ube)
- Water for boiling
- 1 cup sugar
- 2 tbsp butter
- 1 cup all-purpose flour (for filling)
- A bit of water
- Sesame seeds
Instructions
- In a mixing bowl, combine the flour, vegetable oil, salt, and water to create a soft dough. Knead well until it’s smooth and elastic.
- Cover the dough with a cloth and let it rest for 35 minutes.
- While the dough is resting, boil the purple yam until it’s soft. Drain and mash it until it’s smooth.
- Mix the sugar into the mashed purple yam until it’s fully dissolved. Gradually add the additional flour, stirring until just combined.
- In a pan, melt the butter and add the yam mixture. Stir it frequently until the mixture is dry and thick. Set aside to cool, then form into 20 small balls.
- Once the dough has rested, return to it. Oil your hands and roll it into a log, cutting it into 20 equal pieces.
- Flatten each piece of dough, then place an ube ball in the center. Carefully fold the dough around the filling and flatten it slightly.
- Brush the tops with a bit of water and sprinkle sesame seeds on top.
- Cook the piyaya in a preheated pan over medium-low heat, flipping them every minute until golden brown and crispy on both sides.
Notes
For better results, ensure the ube filling is not too wet, and consider variations like adding coconut or chocolate to the filling.
