Ingredients
- 4 – 5 pounds corned beef brisket with spice packet
- 4 cups water
- 1 large onion (quartered)
- 3 cloves garlic (smashed)
- 4 – 5 large carrots (cut into chunks)
- 1 small head cabbage (cut into wedges)
- 4 – 5 medium potatoes (cut into chunks)
- 1 teaspoon black peppercorns
- 2 bay leaves
- Optional for garnish: fresh parsley or mustard
Instructions
- Rinse the corned beef under cold water.
- Prepare a large pot and place the rinsed corned beef brisket inside.
- Pour in the water to submerge the meat fully.
- Add the quartered onion, smashed garlic, black peppercorns, and bay leaves.
- Bring the pot to a boil over medium-high heat, then reduce to a gentle simmer.
- Cover the pot and let it simmer for about 3 to 4 hours or until the meat is tender.
- Add the potatoes, carrots, and cabbage to the pot.
- Check for doneness after an additional 30 to 45 minutes.
- Serve the slices with vegetables and garnish if desired.

Allow the corned beef to rest after cooking for the best texture and flavor. Store leftovers in the refrigerator for up to 4 days, or freeze for longer storage.
