Description

A hearty and comforting breakfast casserole made with sausage, eggs, cheese, and crispy hash browns, perfect for family gatherings or weekend brunch.


Ingredients

  • 1 pound breakfast sausage
  • 6 green onions, chopped
  • 1 red bell pepper, chopped
  • 10 large eggs
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Tabasco (optional)
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded
  • 1 (30 ounce) package frozen shredded hash browns, thawed


Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch baking dish with nonstick spray.
  2. Sauté the sausage with the red bell pepper and white parts of the green onions in a skillet over medium-high heat for 6-8 minutes.
  3. In a mixing bowl, whisk together eggs, heavy cream, Dijon mustard, Tabasco, salt, black pepper, and half of the green onions.
  4. Stir 1 ½ cups cheddar cheese into the egg mixture, then fold in the thawed hash browns and sausage mixture.
  5. Pour into the baking dish, spreading evenly.
  6. Cover with foil and bake at 350°F for 50 minutes.
  7. Remove foil, add remaining cheese, increase temperature to 400°F, and bake until set and golden brown, about 10-15 minutes.
  8. Let sit for 10 minutes before serving, garnished with remaining green onions.

Notes

Feel free to customize with additional vegetables or different types of cheese. This dish can be made ahead of time and stored in the refrigerator.
