Description

Pineapple glazed salmon is a delightful dish that combines the rich flavor of salmon with the sweet and tangy notes of a pineapple glaze.


Ingredients

  • 4 salmon fillets, approximately 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple, diced and well drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and lightly grease a baking dish.
  2. Whisk together the brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger (if using) to create your glaze.
  3. Pat the salmon fillets dry with paper towels, then rub each with olive oil and season with salt and black pepper.
  4. Place the seasoned salmon skin-side down in the prepared baking dish.
  5. Spoon about two-thirds of the pineapple glaze mixture over each salmon fillet and scatter the diced pineapple around the salmon.
  6. Bake for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork.
  7. If desired, briefly broil the salmon for 1 to 2 minutes for a more caramelized glaze.
  8. Let the salmon rest for 5 minutes before serving, garnishing with fresh chopped parsley.

Notes

Choose fresh salmon for better flavor. Pat dry before seasoning for optimal glaze adherence. Experiment with various fruits for the glaze.
