Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsweetened shredded coconut
- 1/2 cup crushed pineapple (with juice)
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Cream the butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract until well incorporated.
- In another bowl, combine the flour, baking powder, salt, and shredded coconut.
- Slowly add the dry mixture to the wet ingredients, alternating with the crushed pineapple, and mix until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
