Description

A quick and colorful dish combining sweet and savory flavors with chicken, fresh vegetables, and pineapple.


Ingredients

  • 1 lb chicken breast, sliced
  • 1 cup pineapple chunks
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving


Instructions

  1. In a large pan, heat sesame oil over medium-high heat.
  2. Add garlic and ginger; sauté for 30 seconds until fragrant.
  3. Add the sliced chicken and cook until browned and cooked through.
  4. Stir in the mixed vegetables and pineapple chunks, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Pour the soy sauce and honey over the mixture, stirring to combine.
  6. Season with salt and pepper to taste.
  7. Serve the stir fry over cooked rice.

Notes

For better flavor, serve hot with a sprinkle of sesame seeds or chopped green onions. Leftovers can be stored in an airtight container for up to 3 days.
