Ingredients
- 1 lb chicken breast, sliced
- 1 cup pineapple chunks
- 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a large pan, heat sesame oil over medium-high heat.
- Add garlic and ginger; sauté for 30 seconds until fragrant.
- Add the sliced chicken and cook until browned and cooked through.
- Stir in the mixed vegetables and pineapple chunks, cooking for an additional 3-4 minutes until the vegetables are tender.
- Pour the soy sauce and honey over the mixture, stirring to combine.
- Season with salt and pepper to taste.
- Serve the stir fry over cooked rice.
Notes
For better flavor, serve hot with a sprinkle of sesame seeds or chopped green onions. Leftovers can be stored in an airtight container for up to 3 days.
