Description

Ingredients

  • 1 lb Chicken Breast
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (Minced)
  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (Diced)
  • 1/4 cup Green Onions (Chopped)
  • Sesame seeds (For serving)
  • Crushed red pepper (Optional)


Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. In a large skillet or wok, heat the olive or sesame oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, approximately 5-7 minutes.
  3. Add the minced garlic and stir-fry for an additional minute or until fragrant.
  4. In a small bowl, mix together soy sauce, pineapple juice, honey (or brown sugar), rice vinegar, cornstarch, and water. Whisk until smooth.
  5. Pour the sauce over the cooked chicken in the skillet. Stir to coat evenly, cooking for 2-3 minutes to thicken.
  6. Add pineapple chunks and diced red bell pepper. Stir everything together and cook for another 2-3 minutes.
  7. Serve the pineapple chicken mixture over cooked rice and garnish with green onions, sesame seeds, and crushed red pepper if desired.

Notes

Use fresh ingredients for better flavor. Adjust sweetness of the sauce to your liking.
