Ingredients

  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce (low sodium)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame seeds (for serving)
  • Crushed red pepper (optional)


Instructions

  1. Start by cutting the chicken breast into bite-sized pieces.
  2. In a large skillet, heat the olive or sesame oil over medium-high heat and sauté the minced garlic for about 30 seconds.
  3. Add the chicken pieces and cook until no longer pink.
  4. Whisk together soy sauce, pineapple juice, honey, vinegar, cornstarch, and water in a bowl to create the sauce.
  5. Pour the sauce over chicken and allow it to simmer for 5 minutes.
  6. Add pineapple chunks and diced bell pepper, cooking for an additional 3-4 minutes.
  7. Serve over cooked rice, garnished with chopped green onions and sesame seeds.
