A delightful twist on traditional pecan pie, Pecan Pie Bark combines rich chocolate and sweet, crunchy pecans for an irresistible treat, perfect for holidays or gatherings.
Ingredients
- 24 ounces semi-sweet chocolate chips or chopped chocolate bars
- 1 tablespoon coconut oil or unsalted butter (optional)
- 1 cup unsalted butter, cut into pieces
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/2 cup light corn syrup
- 1/2 teaspoon salt
- 1 teaspoon pure vanilla extract
- 3 cups pecan halves or large pieces, lightly toasted
Instructions
- Line two large baking sheets with parchment paper.
- Toast the pecans by spreading them on an unlined baking sheet and baking at 350°F for about 5-7 minutes. Let cool.
- For the chocolate base: Melt chocolate with coconut oil in a microwave or double boiler. Pour onto the lined baking sheet and spread into a thin layer. Chill until set.
- For the pecan pie topping: Combine butter, sugars, corn syrup, and salt in a saucepan over medium heat, stirring until boiling. Boil for 5-7 minutes until thickened.
- Remove from heat and stir in vanilla extract, then fold in toasted pecans.
- Pour the pecan topping over the chocolate layer and spread evenly. Chill for 2-3 hours until firm.
- Remove from the refrigerator and let sit for 5-10 minutes. Break into pieces and store in an airtight container.
Notes
Can be served as a dessert or wrapped individually for party favors. Store in an airtight container at room temperature for up to two weeks.
