Description

A delightful twist on traditional pecan pie, Pecan Pie Bark combines rich chocolate and sweet, crunchy pecans for an irresistible treat, perfect for holidays or gatherings.


Ingredients

  • 24 ounces semi-sweet chocolate chips or chopped chocolate bars
  • 1 tablespoon coconut oil or unsalted butter (optional)
  • 1 cup unsalted butter, cut into pieces
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3 cups pecan halves or large pieces, lightly toasted


Instructions

  1. Line two large baking sheets with parchment paper.
  2. Toast the pecans by spreading them on an unlined baking sheet and baking at 350°F for about 5-7 minutes. Let cool.
  3. For the chocolate base: Melt chocolate with coconut oil in a microwave or double boiler. Pour onto the lined baking sheet and spread into a thin layer. Chill until set.
  4. For the pecan pie topping: Combine butter, sugars, corn syrup, and salt in a saucepan over medium heat, stirring until boiling. Boil for 5-7 minutes until thickened.
  5. Remove from heat and stir in vanilla extract, then fold in toasted pecans.
  6. Pour the pecan topping over the chocolate layer and spread evenly. Chill for 2-3 hours until firm.
  7. Remove from the refrigerator and let sit for 5-10 minutes. Break into pieces and store in an airtight container.

Notes

Can be served as a dessert or wrapped individually for party favors. Store in an airtight container at room temperature for up to two weeks.
