Description
A delightful salad featuring fresh pears and crunchy candied pecans, dressed with a zesty balsamic vinaigrette.
Ingredients
- 4 tbsp brown sugar
- 1 tsp ground cinnamon
- 1 pinch sea salt
- 1/2 tsp vanilla extract
- 1 tbsp water
- 1 cup pecans
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 garlic clove (minced)
- 3/4 cup extra virgin olive oil
- 10 oz baby spring mix
- 1 pear (sliced)
- 1 cup dried cherries
- 1 cup candied pecans
- 1/3 cup feta cheese
- 1 cup balsamic vinaigrette
Instructions
- In a medium skillet, combine the brown sugar, cinnamon, sea salt, vanilla extract, and water over medium heat. Stir until the sugar is dissolved.
- Add the pecans to the skillet, stirring to coat them evenly with the sugar mixture.
- Cook for about 5-7 minutes, stirring frequently, until the pecans are golden brown and caramelized.
- Remove from heat and transfer the pecans to a parchment-lined baking sheet. Let them cool completely.
- In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, sea salt, black pepper, and minced garlic.
- Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined and emulsified. Set aside.
- In a large bowl, toss the baby spring mix with a generous amount of balsamic vinaigrette.
- Layer in the sliced pears, dried cherries, candied pecans, and crumbled feta cheese.
- Drizzle additional balsamic vinaigrette over the salad if desired, serve immediately, and enjoy!
Notes
For the best flavor, use ripe but firm pears. Customize sweetness by adjusting honey in the dressing.
