Description

A delightful and nutritious snack made with rolled oats, peanut butter, and honey, requiring no baking.


Ingredients

  • 1/2 cup natural honey
  • 1/3 cup natural, smooth peanut butter
  • 2 1/4 cups rolled oats
  • 1 tsp vanilla extract
  • 3/4 cup dark chocolate
  • 2 tsp coconut oil
  • Sea salt for garnish (optional)


Instructions

  1. In a large bowl, stir together the rolled oats, honey, peanut butter, and vanilla extract until well combined.
  2. Lightly grease a muffin tin and divide the oat mixture evenly into each cup, pressing firmly.
  3. Melt the dark chocolate and coconut oil in a microwave-safe bowl in short bursts, stirring until smooth.
  4. Spoon the melted chocolate over the oat mixture in each cup and sprinkle with sea salt if desired.
  5. Place the muffin tin in the freezer for about one hour until firm. Remove from the tin and store in the refrigerator or freezer.

Notes

Can be customized with nuts, dried fruit, or seeds. Store in an airtight container for up to a week in the fridge or three months in the freezer.
