Description

Delicious and nutritious no-bake treats packed with peanut butter, oats, and chocolate chips, perfect for a quick energy boost.


Ingredients

  • 1/2 cup quick oats
  • 1/4 cup peanut butter (creamy or crunchy)
  • 2 tablespoons honey
  • 1/4 cup mini chocolate chips
  • Optional: chia seeds, flaxseed, shredded coconut, or chopped dried cranberries


Instructions

  1. In a medium bowl, mix together the oats and mini chocolate chips until evenly combined.
  2. Add the peanut butter and honey into the bowl, stirring until the mixture is thick and sticky.
  3. Using a tablespoon, portion out the mixture and form 12 evenly sized balls.
  4. Let the energy bites rest for about 30 minutes to improve their texture.
  5. Store in an airtight container at room temperature for up to 3 days, in the fridge for up to 1 week, or freeze for up to 3 months. Thaw before eating.

Notes

For a healthier treat, use natural peanut butter without added sugars or hydrogenated oils. Adjust sweetness by reducing honey or using mashed banana.
