Description

A delightful and colorful pasta salad, perfect for gatherings and picnics, featuring fresh vegetables and mozzarella.


Ingredients

  • 8 ounces pasta (rotini, penne, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup mozzarella balls or cubed mozzarella cheese
  • 1/4 cup black olives, sliced
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh herbs such as parsley or basil for garnish


Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool it down.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, red bell pepper, red onion, mozzarella, and black olives in a large bowl.
  3. Pour the Italian dressing over the salad and gently toss to combine all ingredients.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Garnish with fresh herbs before serving.
