Ingredients
- 8 ounces pasta (rotini, penne, or your choice)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 cup mozzarella balls or cubed mozzarella cheese
- 1/4 cup black olives, sliced
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh herbs such as parsley or basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water to cool it down.
- Combine the cooled pasta with cherry tomatoes, cucumber, red bell pepper, red onion, mozzarella, and black olives in a large bowl.
- Pour the Italian dressing over the salad and gently toss to combine all ingredients.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Garnish with fresh herbs before serving.
