Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 2 teaspoons dried herbs (such as thyme, rosemary, or Italian seasoning)
  • 1 teaspoon salt
  • ½ teaspoon pepper


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the potatoes, then cut them into wedges or cubes.
  3. In a large bowl, toss the potatoes with olive oil, garlic powder, dried herbs, salt, and pepper until evenly coated.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.
  6. Remove from the oven and sprinkle with Parmesan cheese.
  7. Return to the oven for an additional 5 minutes to melt the cheese.
