Ingredients
- 2 lbs Yukon Gold or red potatoes
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 2 teaspoons dried herbs (such as thyme, rosemary, or Italian seasoning)
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the potatoes, then cut them into wedges or cubes.
- In a large bowl, toss the potatoes with olive oil, garlic powder, dried herbs, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden and crispy, flipping halfway through.
- Remove from the oven and sprinkle with Parmesan cheese.
- Return to the oven for an additional 5 minutes to melt the cheese.
- Serve hot.
