Ingredients

  • 1 1/2 lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 tablespoons olive oil (for chicken)
  • 2 garlic cloves, minced (for chicken)
  • 1/3 cup grated parmesan cheese (for chicken)
  • 1/3 cup breadcrumbs (Italian or plain)
  • 1/2 teaspoon cracked pepper
  • 1/23/4 teaspoon sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 1-2 garlic cloves, minced (for potatoes)
  • 2 tablespoons olive oil (for potatoes)
  • 2 tablespoons grated parmesan cheese (for potatoes)

  • 1 lb fresh green beans, ends trimmed
  • 1 tablespoon olive oil (for green beans)

Instructions

  1. Preheat your oven to 425°F. Line a sheet pan with parchment paper or spray it with cooking oil to prevent sticking.
  2. In a bowl, toss the red potatoes with 2 tablespoons of olive oil, 1-2 minced garlic cloves, and 2 tablespoons of grated parmesan cheese. Season with salt and pepper to taste, ensuring everything is well coated.
  3. Spread the seasoned potatoes on one-third of the sheet pan. Bake for about 10-15 minutes, allowing them to start cooking.
  4. While the potatoes bake, prepare the chicken. In a medium bowl, combine the chicken breast with 2 tablespoons of olive oil, 2 minced garlic cloves, 1/3 cup of grated parmesan cheese, 1/3 cup of breadcrumbs, and the cracked pepper and sea salt. Mix until the chicken is well coated.
  5. Once the potatoes have baked for 10-15 minutes, add the seasoned chicken to the empty space on the sheet pan.
  6. In a separate bowl, prepare the green beans by mixing them with 1 tablespoon of olive oil, 1 minced garlic clove, and the optional parmesan cheese. Toss and season with salt and pepper to taste.
  7. Add the green beans to the sheet pan beside the chicken.
  8. Bake everything together for an additional 25 minutes, or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, consider broiling on high for an additional 4-5 minutes after baking.
  9. Allow the dinner to cool for a few minutes before serving, and enjoy.
