Ingredients
- 20-24 oz mahi mahi (4 pieces)
- 1/3 cup all-purpose flour
- 1/2 tsp garlic powder
- 2 tbsp grated Parmesan cheese
- Salt
- 2 eggs
- Fresh cracked black pepper
- 1/2 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tbsp parsley
- 1/2 tsp garlic powder

Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.
- Set up three shallow bowls: one with seasoned flour, one with whisked eggs, and one with Panko and Parmesan mixture.
- Season and coat the mahi mahi fillets with salt and pepper, then dredge in flour, dip in egg, and press into the Panko mixture.
- Bake the fillets for 18-22 minutes until the crust is golden brown and the fish flakes easily with a fork.
- Rest briefly and serve with lemon wedges or your chosen sauce.
Notes
For gluten-free options, substitute with gluten-free flour and Panko. Make-ahead crumb mix can be stored in an airtight container.
