Description
A simple and delicious one-pot meal combining ground turkey, pasta, and vegetables, perfect for busy weeknights.
Ingredients
- 1 pound ground turkey
- 12 ounces penne or rotini pasta
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (including juices)
- 2 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup chopped spinach
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.
- Add the ground turkey to the pot, cooking it until browned and cooked through.
- Stir in the diced tomatoes (with juices), chicken broth, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then add the pasta. Reduce the heat and let it simmer until the pasta is cooked al dente.
- Stir in the chopped spinach and cook until it wilts down.
- Remove the pot from heat, and stir in the grated Parmesan cheese. Allow the dish to sit for a few minutes before serving.
- Garnish with fresh basil before serving.
Notes
Use fresh ingredients for the best flavor and adjust seasonings to your taste. Letting the dish sit after mixing in cheese enhances the creaminess.
