Ingredients
- 1 pound ground turkey
- 1 cup orzo pasta
- 1 onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups spinach
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook the ground turkey over medium heat until browned.
- Add the diced onion, garlic, and bell pepper; cook until softened.
- Stir in the orzo, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 10 minutes, stirring occasionally, until orzo is al dente.
- Stir in the spinach until wilted.
- Serve with grated Parmesan cheese on top.
