Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach
  • Grated Parmesan cheese for serving


Instructions

  1. In a large pot, cook the ground turkey over medium heat until browned.
  2. Add the diced onion, garlic, and bell pepper; cook until softened.
  3. Stir in the orzo, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 10 minutes, stirring occasionally, until orzo is al dente.
