Description

A delightful and hearty one-pot dish that combines savory sausage, vibrant vegetables, and aromatic spices for a flavorful meal.


Ingredients

  • 1 pound sausage (Italian or andouille)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 green onion, sliced (for garnish)


Instructions

  1. In a large pot over medium heat, cook the sausage until browned.
  2. Add the chopped onion, bell pepper, garlic, and celery to the pot and sauté until softened, about 5 minutes.
  3. Stir in the long-grain white rice and toast for a couple of minutes.
  4. Pour in the chicken broth, and add the paprika, cayenne pepper, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 20 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat and fluff the rice gently with a fork. Garnish with sliced green onions before serving.

Notes

Feel free to add more veggies or adjust spiciness to your liking. Store leftovers in an airtight container.
