Ingredients
- 1 pound sausage (Italian or andouille)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 green onion, sliced (for garnish)
Instructions
- In a large pot over medium heat, cook the sausage until browned.
- Add the chopped onion, bell pepper, garlic, and celery to the pot and sauté until softened, about 5 minutes.
- Stir in the long-grain white rice and toast for a couple of minutes.
- Pour in the chicken broth, and add the paprika, cayenne pepper, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and fluff the rice gently with a fork. Garnish with sliced green onions before serving.
