Ingredients
- 1 pound chicken thighs, boneless and skinless
- 2 tablespoons shawarma spice mix
- 2 cups jasmine rice
- 4 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Yogurt sauce for topping (yogurt, cucumber, lemon juice, and garlic)
Instructions
- In a bowl, coat the chicken thighs with shawarma spice mix, salt, and pepper.
- In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened.
- Add the chicken to the pot and brown on all sides.
- Stir in the jasmine rice, then pour in the chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
- In a separate bowl, mix yogurt with grated cucumber, lemon juice, and minced garlic to make the sauce.
- Serve the chicken and rice topped with the yogurt sauce.
