Enjoy a delicious One Pot Chicken Shawarma Rice that’s packed with Middle Eastern flavors, easy to prepare, and perfect for busy weeknights.
Ingredients
- 2 cups white rice
- 1 pound boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Salt and pepper to taste
- 4 cups chicken broth
- 1 cup plain yogurt
- 1 cucumber, diced
- Fresh parsley for garnish
Instructions
- In a bowl, mix the chicken thighs with olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper. Let it marinate for at least 30 minutes.
- In a large pot, sauté the chopped onion over medium heat until translucent, about 3 to 5 minutes.
- Add the marinated chicken to the pot, browning it on all sides for around 5 to 7 minutes.
- Stir in the rice, ensuring it’s well combined with the chicken and onions.
- Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.
- Prepare the yogurt sauce by combining yogurt with diced cucumber, salt, and pepper in a separate bowl. Mix well and set aside.
- Once the rice is done, fluff it with a fork and serve hot, topped with yogurt sauce and parsley.
Notes
For enhanced flavor, marinate the chicken overnight. Be careful not to overcook the rice.
