Description

Enjoy a delicious One Pot Chicken Shawarma Rice that’s packed with Middle Eastern flavors, easy to prepare, and perfect for busy weeknights.


Ingredients

  • 2 cups white rice
  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 cup plain yogurt
  • 1 cucumber, diced
  • Fresh parsley for garnish


Instructions

  1. In a bowl, mix the chicken thighs with olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper. Let it marinate for at least 30 minutes.
  2. In a large pot, sauté the chopped onion over medium heat until translucent, about 3 to 5 minutes.
  3. Add the marinated chicken to the pot, browning it on all sides for around 5 to 7 minutes.
  4. Stir in the rice, ensuring it’s well combined with the chicken and onions.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.
  6. Prepare the yogurt sauce by combining yogurt with diced cucumber, salt, and pepper in a separate bowl. Mix well and set aside.
  7. Once the rice is done, fluff it with a fork and serve hot, topped with yogurt sauce and parsley.

Notes

For enhanced flavor, marinate the chicken overnight. Be careful not to overcook the rice.
