Description

This One Pot Chicken and Rice combines tender chicken thighs and fluffy basmati rice, offering a flavorful and comforting meal with minimal cleanup.


Ingredients

  • 1½ cups uncooked basmati rice
  • 6 chicken thighs
  • 1½ tsp mixed herbs
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp olive oil
  • 1 cup onion, chopped
  • 1 Tbsp butter
  • 3 cups low sodium chicken stock
  • Salt and pepper to taste
  • ½ cup green onions to garnish


Instructions

  1. In a small mixing bowl, combine smoked paprika, mixed herbs, garlic powder, onion powder, salt, and black pepper. Mix well.
  2. Rinse the basmati rice under cold water until the water runs clear, then set aside.
  3. Toss chicken thighs with the seasoning mixture, reserving about a teaspoon for later use.
  4. Heat olive oil in a large pot over medium-high heat and sear chicken thighs skin-side down for approximately 3 minutes on each side.
  5. Remove chicken and set aside.
  6. Add chopped onions to the same pot and sauté until soft and translucent.
  7. Add butter and stir until melted.
  8. Introduce rinsed rice to the pot, stirring for 1-2 minutes to toast slightly.
  9. Pour in chicken stock, add reserved seasoning, stir well to deglaze, and taste to adjust seasoning if necessary.
  10. Arrange seared chicken thighs over rice, cover pot, reduce heat to low-medium and cook for 15-20 minutes.
  11. After cooking, garnish with chopped green onions, cover and let sit for 3 minutes before serving. Fluff rice gently with a fork.

Notes

For added flavor, consider using fresh herbs or vegetables like peas and bell peppers. Resting the dish helps flavors to develop further.
