Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the orzo and cook for 1–2 minutes.
  4. Pour in the vegetable broth and add the broccoli florets, dried thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat to a simmer and cover.
  6. Cook for about 10–12 minutes, stirring occasionally, until the orzo is tender and the broccoli is cooked through.
  7. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  8. Garnish with fresh parsley before serving.
