A delicious and easy one-pan chicken recipe featuring juicy chicken breasts in a rich balsamic sauce with fresh cherry tomatoes and mozzarella.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for 4-5 minutes on each side until golden brown.
- Pour the balsamic vinegar over the seared chicken, then add the cherry tomatoes on top.
- Sprinkle mozzarella cheese evenly over the chicken and tomatoes.
- Transfer the skillet to the oven and bake for about 20-25 minutes, or until the chicken is cooked through.
- Remove from the oven and garnish with chopped fresh basil before serving.
