Description

A delicious and easy one-pan chicken recipe featuring juicy chicken breasts in a rich balsamic sauce with fresh cherry tomatoes and mozzarella.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for 4-5 minutes on each side until golden brown.
  3. Pour the balsamic vinegar over the seared chicken, then add the cherry tomatoes on top.
  4. Sprinkle mozzarella cheese evenly over the chicken and tomatoes.
  5. Transfer the skillet to the oven and bake for about 20-25 minutes, or until the chicken is cooked through.
  6. Remove from the oven and garnish with chopped fresh basil before serving.
