Ingredients
- 1 pound ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups beef broth
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, and sauté until translucent.
- Add ground beef, cooking until browned.
- Stir in diced potatoes, paprika, oregano, salt, and pepper.
- Pour in beef broth and bring to a simmer.
- Cover and cook for about 20-25 minutes, stirring occasionally, until potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
For a lighter version, use ground turkey or chicken instead of beef. You can also substitute sweet potatoes for regular potatoes for a healthier twist.
