Description

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • Fresh parsley for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, and sauté until translucent.
  3. Add ground beef, cooking until browned.
  4. Stir in diced potatoes, paprika, oregano, salt, and pepper.
  5. Pour in beef broth and bring to a simmer.
  6. Cover and cook for about 20-25 minutes, stirring occasionally, until potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

For a lighter version, use ground turkey or chicken instead of beef. You can also substitute sweet potatoes for regular potatoes for a healthier twist.
