Ingredients
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Feta cheese for topping (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the zucchini, bell pepper, red onion, cherry tomatoes, mushrooms, and garlic.
- Drizzle the mixture with olive oil and sprinkle with oregano, salt, and pepper. Toss everything gently until the vegetables are evenly coated.
- Spread the vegetable mixture out in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
- Optional: Before serving, sprinkle feta cheese on top for an extra layer of flavor.
Notes
Don’t overcrowd the pan for proper roasting. Use seasonal vegetables for the best flavor.
