Ingredients
- 2 cups chopped bell peppers (mixed colors)
- 1 large zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- ½ cup Kalamata olives
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup crumbled feta cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix all the vegetables, olives, olive oil, oregano, garlic powder, salt, and black pepper in a large bowl.
- Spread the mixture evenly on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring once halfway through.
- If desired, sprinkle with crumbled feta cheese before serving.
