Instructions
- Preheat the oven to 400°F (200°C).
- Combine zucchini, bell pepper, onion, cherry tomatoes, mushrooms, and garlic in a large bowl.
- Drizzle olive oil over the vegetables and sprinkle with oregano, salt, and pepper. Toss to coat evenly.
- Spread the mixture in a single layer on a large baking sheet.
- Roast in the preheated oven for about 20-25 minutes or until the vegetables are tender and slightly caramelized.
