Ingredients

  • 2 chicken breasts
  • 8 oz egg noodles
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • Parmesan cheese (optional, for serving)


Instructions

  1. Heat the olive oil in a large pan over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Add to the pan and cook for 6-7 minutes on each side, or until fully cooked.
  2. Remove the chicken from the pan and set aside. In the same pan, add the butter and minced garlic, then sauté until fragrant.
  3. Add the chicken broth to the pan and bring to a simmer.
  4. Cook the egg noodles according to package instructions in a separate pot, then drain.
  5. Combine the cooked noodles in the pan with the garlic butter mixture.
  6. Slice the chicken breasts and serve over the buttery noodles. Top with Parmesan cheese if desired.

Notes

For added flavor, consider using chicken thighs instead of breasts. You can also add your favorite vegetables for extra nutrition.
