Description
A comforting dish combining tender chicken breasts and buttery garlic noodles, perfect for busy weeknights.
Ingredients
- 4 boneless, skinless chicken breasts (about 1½ lb)
- 8 oz wide egg noodles
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- ½ cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
- 1 tsp dried thyme
- ½ tsp red-pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and dried thyme. Let rest for 10 minutes.
- Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of butter. When it foams, add the chicken breasts. Cook for 4-5 minutes on each side until golden and at 140°F. Remove and keep warm.
- Add the remaining butter to the skillet. Stir in garlic and cook for 30 seconds. Pour chicken broth and lemon juice, simmer for 2-3 minutes.
- Add egg noodles, coating them in the sauce, then add ½ cup of hot water. Cover and steam for 8-10 minutes, stirring halfway through.
- Preheat oven to 375°F. Once noodles are cooked, place chicken on top, spooning sauce over it. Bake for 12-15 minutes until chicken reaches 165°F.
- Allow to rest for 5 minutes, slice chicken, and sprinkle with parsley before serving.
Notes
Rest the chicken for even cooking, and feel free to add vegetables for a healthier balance.
