One-Pan Chicken with Buttered Noodles

Description

A comforting dish combining tender chicken breasts and buttery garlic noodles, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts (about lb)
  • 8 oz wide egg noodles
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ cup low-sodium chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried thyme
  • ½ tsp red-pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley


Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and dried thyme. Let rest for 10 minutes.
  2. Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of butter. When it foams, add the chicken breasts. Cook for 4-5 minutes on each side until golden and at 140°F. Remove and keep warm.
  3. Add the remaining butter to the skillet. Stir in garlic and cook for 30 seconds. Pour chicken broth and lemon juice, simmer for 2-3 minutes.
  4. Add egg noodles, coating them in the sauce, then add ½ cup of hot water. Cover and steam for 8-10 minutes, stirring halfway through.
  5. Preheat oven to 375°F. Once noodles are cooked, place chicken on top, spooning sauce over it. Bake for 12-15 minutes until chicken reaches 165°F.
  6. Allow to rest for 5 minutes, slice chicken, and sprinkle with parsley before serving.

Notes

Rest the chicken for even cooking, and feel free to add vegetables for a healthier balance.
