Ingredients

  • 1 cup whole-grain oats
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, peanut butter, maple syrup or agave nectar, chia seeds, flaxseeds, vanilla extract, baking soda, and salt until well combined. If desired, fold in chocolate chips.
  3. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Flatten each cookie slightly with the back of a spoon.
  5. Bake for 12-15 minutes or until the edges are golden.
  6. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use natural peanut butter for healthier cookies. Optional ingredients like nuts or dried fruit can boost nutrition. Don’t overbake to keep cookies soft.
