Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder

- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups diced ripe nectarines
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- Mix the flour, sugar, baking powder, and salt together in a large bowl.
- Whisk together the melted butter, eggs, milk, and vanilla extract in another bowl.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the diced nectarines gently.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
Notes
If using very juicy nectarines, pat them dry briefly before adding to the batter. Store cooled muffins in an airtight container for up to 2 days.
