Ingredients
- 2 cups fresh nectarines, diced
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 package empanada dough discs
- 1 egg, beaten (for egg wash)
- 1 tablespoon flour (for dusting)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the diced nectarines, sugar, lemon juice, and cinnamon in a bowl.
- Roll out the empanada dough discs on a lightly floured surface.
- Place a spoonful of the nectarines mixture in the center of each disc.
- Fold the dough over to create a half-moon shape and press the edges to seal.
- Brush the tops with the beaten egg.
- Place on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Cool slightly before serving.
