Description

Delightful, portable pastries filled with sweet, slightly tart nectarines that capture the essence of summer.


Ingredients

  • 2 cups fresh nectarines, diced
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 package empanada dough discs
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon flour (for dusting)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the diced nectarines, sugar, lemon juice, and cinnamon in a bowl.
  3. Roll out the empanada dough discs on a lightly floured surface.
  4. Place a spoonful of the nectarines mixture in the center of each disc.
  5. Fold the dough over to create a half-moon shape and press the edges to seal.
  6. Brush the tops with the beaten egg.
  7. Place on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown.
  9. Cool slightly before serving.
