Description

A beautiful, rustic dessert that celebrates juicy stone fruit and features a flaky, buttery crust.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 34 ripe nectarines, sliced
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon sugar (for sprinkling)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix flour and salt in a bowl. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water gradually until the dough comes together.
  3. Roll out the dough on a floured surface to form a large circle. Transfer to a baking sheet lined with parchment paper.
  4. Combine the sliced nectarines, sugar, cinnamon, and vanilla extract in another bowl.
  5. Place the nectarine mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the nectarines.
  6. Brush the dough with beaten egg and sprinkle sugar over it.
  7. Bake in the preheated oven for about 30–35 minutes or until the crust is golden brown and the nectarines are tender.
  8. Allow to cool slightly before serving.

Notes

Keep the butter cold for a flakier crust. Don’t overwork the dough, and adjust sugar according to the sweetness of the nectarines.
