Description

A comforting and hearty casserole featuring tender chicken, earthy mushrooms, and rich Gruyere cheese.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 cup Gruyere cheese, shredded
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  3. Add diced chicken and cook until browned.
  4. Stir in sliced mushrooms and thyme, and cook until mushrooms are soft.
  5. In a large bowl, mix the cooked rice, chicken mixture, chicken broth, heavy cream, and half of the Gruyere cheese. Season with salt and pepper.
  6. Transfer the mixture to a greased casserole dish. Top with remaining Gruyere cheese.
  7. Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden.
  8. Garnish with fresh parsley before serving.

Notes

This casserole can be prepared in advance and refrigerated before baking. Use fresh ingredients for the best flavor.
