A comforting and hearty casserole featuring tender chicken, earthy mushrooms, and rich Gruyere cheese.
Ingredients
- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 cup mushrooms, sliced
- 1 cup Gruyere cheese, shredded
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
- Add diced chicken and cook until browned.
- Stir in sliced mushrooms and thyme, and cook until mushrooms are soft.
- In a large bowl, mix the cooked rice, chicken mixture, chicken broth, heavy cream, and half of the Gruyere cheese. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish. Top with remaining Gruyere cheese.
- Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
This casserole can be prepared in advance and refrigerated before baking. Use fresh ingredients for the best flavor.
