Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 3 large eggs
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Beat the butter and sugar in a large mixing bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla.
- Gradually add flour mixture to the butter mixture, mixing until just combined. Fold in blueberries.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow the cake to cool before transferring to a serving plate.
Notes
Use room temperature ingredients for a smoother batter. Toss blueberries in a little flour to prevent sinking.
