Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Beat the butter and sugar in a large mixing bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla.
  5. Gradually add flour mixture to the butter mixture, mixing until just combined. Fold in blueberries.
  6. Pour the batter into the prepared bundt pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Allow the cake to cool before transferring to a serving plate.

Notes

Use room temperature ingredients for a smoother batter. Toss blueberries in a little flour to prevent sinking.
