Ingredients

  • 1 cup couscous
  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 red bell pepper, chopped
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Lemon juice


Instructions

  1. In a pot, bring chicken broth to a boil. Once boiling, add couscous, cover, and remove from heat. Let it sit for 5 minutes before fluffing it with a fork.
  2. In a skillet, heat olive oil over medium-high heat. Add the diced chicken and season with cumin, paprika, salt, and pepper. Cook until the chicken is browned and fully cooked through.
  3. In a large bowl, combine the cooked couscous, cooked chicken, red bell pepper, cucumber, cherry tomatoes, red onion, and parsley.
  4. Drizzle the mixture with olive oil and lemon juice, then toss it gently to combine all the flavors.
  5. Serve warm or at room temperature.
