Ingredients
- 1 cup couscous
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 red bell pepper, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
- Lemon juice
Instructions
- In a pot, bring chicken broth to a boil. Once boiling, add couscous, cover, and remove from heat. Let it sit for 5 minutes before fluffing it with a fork.
- In a skillet, heat olive oil over medium-high heat. Add the diced chicken and season with cumin, paprika, salt, and pepper. Cook until the chicken is browned and fully cooked through.
- In a large bowl, combine the cooked couscous, cooked chicken, red bell pepper, cucumber, cherry tomatoes, red onion, and parsley.
- Drizzle the mixture with olive oil and lemon juice, then toss it gently to combine all the flavors.
- Serve warm or at room temperature.
