Description

Juicy Moroccan lamb meatballs simmered in a spiced tomato sauce packed with warm spices and perfect for dinner or meal prep.


Ingredients

1 lb ground lamb

1 small onion, grated

2 garlic cloves, minced

1 egg

1/2 cup breadcrumbs

1 tsp ground cumin

1/2 tsp ground cinnamon

1/2 tsp paprika

1/2 tsp ground coriander

Salt and pepper to taste

2 tbsp fresh parsley

1 tbsp fresh mint (optional)


Instructions

1. Mix all ingredients in a bowl

2. Shape into small meatballs

3. Pan-fry in olive oil until browned

4. Remove and make tomato sauce in same pan

5. Add meatballs back in, simmer for 15 minutes

6. Serve with couscous or flatbread

Notes

You can freeze cooked meatballs for up to 3 months.

Adjust spice level with harissa or chili flakes.

Use beef if lamb is unavailable.
