Description

A delightful dish combining tender chicken, creamy sauces, and flavorful spices, all tossed with hearty spaghetti for a satisfying meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz spaghetti
  • 1 tablespoon olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1/2 cup mushrooms, sliced
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup milk
  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté onion, bell pepper, and mushrooms for 5-7 minutes until soft.
  3. Stir in cream of chicken soup, sour cream, garlic powder, onion powder, and milk, cooking for 2-3 minutes until smooth.
  4. Add cooked chicken and 1/2 cup Monterey Jack cheese, heating for another 2-3 minutes until cheese melts.
  5. Toss cooked pasta into the skillet with the creamy sauce until well-mixed.
  6. If desired, transfer the mixture to a greased baking dish, top with remaining cheeses, and bake at 350°F for 20-25 minutes until bubbly.
  7. Garnish with fresh parsley and serve warm.

Notes

For a crispy topping, consider baking the pasta. Use leftover rotisserie chicken for quicker prep.
