Ingredients
2 medium Russet or Yukon Gold potatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil or butter (optional)
Toppings of choice: sour cream, cheese, bacon bits, chives, Greek yogurt, etc.
Instructions
1. Scrub potatoes under running water and dry with a paper towel.
2. Pierce each potato 5–6 times with a fork to release steam during cooking.
3. Optional: Rub with olive oil or butter and sprinkle with salt and pepper.
4. Place potatoes on a microwave-safe plate, leaving space between them.
5. Microwave on high for 5–8 minutes for one potato (add 2–3 minutes per extra potato).
6. Flip potatoes halfway through cooking to ensure even doneness.
7. Check doneness by squeezing gently or inserting a fork—potatoes should be soft.
8. Let rest for 1–2 minutes before cutting open and adding toppings.
