Ingredients
- 8 flour tortillas (or corn tortillas)
- 1 lb ground beef
- 2 tbsp taco seasoning
- 1/4 cup water
- 4 tbsp enchilada sauce
- 8 ounces refried beans (1/2 can)
- 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)

- 1 tomato (roma or beefsteak, seeds removed and diced)
- 1 small red onion (diced)
- 1/4 cup black olives
- 1/4 cup sour cream
- 2 green onions (finely diced)
Instructions
- In a large frying pan or skillet over medium heat, add the ground beef and cook for 5-8 minutes until browned and cooked through.
- Add taco seasoning, water, and 4 tablespoons of enchilada sauce; stir to combine and let simmer for 1-2 minutes.
- Spread a layer of refried beans on one tortilla, add seasoned ground beef and cheese, and top with another tortilla.
- Spread 1 tablespoon of enchilada sauce on the top tortilla and add cheese.
- Repeat assembly for remaining tortillas.
- For air fryer method, preheat to 400°F and cook each pizza for 5 minutes, ensuring it’s crispy and cheese is melted.
- For oven method, preheat to 350°F, arrange on a sheet pan, and bake for 8-10 minutes.
- For pan frying, place each pizza one at a time in a pan with a lid, cooking for 4-5 minutes until crispy.
- Transfer to a plate and top with diced tomatoes, onion, olives, sour cream, and green onions. Serve and enjoy!
Notes
For a gluten-free option, use corn tortillas. Customize with different cheese blends or spices for added flavor.
