Ingredients
- 420 grams can Mexican chilli beans
- 2 tablespoons sour cream
- 1 avocado, mashed
- 1 tablespoon coriander leaves, chopped
- 1 onion, chopped
- 8 corn tortillas
- 1 lime, juiced
- 250 grams premium beef mince
- 250 grams taco sauce
- 1 tablespoon extra virgin olive oil
- 200 grams tub guacamole to serve
Instructions
- Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit).
- Heat the corn tortillas in the microwave for 20 to 30 seconds or until they become soft and pliable.
- Gently mold the softened tortillas into Texas muffin pans to form basket shapes and bake in the preheated oven for about 6 minutes or until they are crisped up.
- While the tortillas are baking, heat the olive oil in a frying pan over medium heat. Add the chopped onion and cook until it’s translucent.
- Add the premium beef mince to the pan, browning it thoroughly. Stir in the Mexican chili beans and taco sauce, cooking until heated through.
- In a separate bowl, roughly mash the avocado, adding lime juice to prevent browning.
- Once the tortilla baskets are done baking, remove them from the pans. Spoon the beef and bean mixture into the baskets and top with guacamole and sour cream.
