A hearty Mediterranean steak bowl filled with vibrant flavors, nutritious ingredients, and topped with a creamy tzatziki sauce.
Ingredients
- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 2 cups cooked grains (such as brown rice or quinoa)
- Cherry tomatoes, halved
- Cucumber, diced
- Red onion, thinly sliced
- Kalamata olives, pitted and halved
- Tzatziki sauce (made from Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, salt, and pepper)
Instructions
- Marinate the steak: In a bowl, mix olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak with the marinade and let it sit for at least 30 minutes.
- Prepare tzatziki: In a bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, and a pinch of salt and pepper. Refrigerate until ready to serve.
- Cook the steak: Heat a skillet over medium-high heat and sear the marinated steak for about 4–5 minutes on each side, then let it rest before slicing.
- Assemble the bowl: Layer cooked grains in a bowl, add sliced steak, cherry tomatoes, diced cucumber, sliced onion, and olives. Drizzle with tzatziki sauce before serving.
Notes
For a smoky flavor, consider grilling the steak instead of pan-searing. Experiment with seasonal vegetables for a fresher taste.
