Ingredients
- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 ounces feta cheese, crumbled
- Fresh parsley, for garnish
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with olive oil, garlic powder, oregano, salt, and pepper until well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until golden and tender, flipping halfway through.
- Once roasted, sprinkle the crumbled feta cheese over the hot potatoes and return to the oven for an additional 5 minutes to melt the cheese slightly.
- For the tzatziki sauce, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a bowl.
- Serve the roasted potatoes topped with feta and garnished with fresh parsley, alongside the tzatziki sauce.
Notes
Choose small potatoes for optimal texture. Don’t overcrowd the baking sheet to ensure proper roasting. Customize seasoning to your preference.
